With the ubiquitous pumpkin sweeping all aside from my local Westchester County Farmers Markets through to Wholefoods, I felt it was time to remind everyone that this is also the season of the Apple here in the ‘Big Apple’ and what better way to celebrate it, than with some local Cortland Apples from New York State, with their deep red green flesh and snow white interior. To top off the fall flavors I added some Maple Syrup and it’s Muffintastic!
Ingredients
- 12 Oz plain / all purpose flour
- 5 oz Soft brown sugar
- 3 x tsp baking powder
- 1/2 tsp salt
- 1 egg beaten
- 1 cup of milk
- 1/4 cup canola oil (or similar)
- 1 apple skin on, cored and chopped in small pieces
- 2 x tbsp apple sauce
- 1/2 cup of walnuts (chopped)
- 1 tsp ground cinnamon
- 1 tbsp maple syrup
Method
- Mix the flour, baking powder, sugar, cinnamon and salt in a large bowl
- In a measuring jug add the beaten eggs, milk and oil and mix with a fork
- Make a well in the center of the flour mix
- Pour in the egg mix
- Stir slowly adding the apple, apple sauce, nuts and maple syrup until a sticky mix is formed
- Spoon the mixture into a muffin tray lined with paper cups
- Bake at 400 f / 200 c for 25 minutes
- Place on a baking rack to cool
Serve with a big mug of fresh coffee to start your Autumnal weekend!
