Scottish & Spice & All Things Nice! Spelt Shortbread with Cardamom

This week we have been getting excited as the new series of Great British Bake Off kicked off on the BBC. I love baking and biscuits has been both a hobby and a profession. I love to experiment with spices and decided to do my take on a classic shortbread with a twist of crushed cardamon. I was persuaded to share it by a couple of friends so here we are in honour of all the Bake Off fans ( the biscuit challenge is next week) & my friend Paul.

Ingredients: 

275g (10oz) spelt flour, 50g (2oz) fine semolina, big pinch of salt,

125g (5oz) golden caster (superfine) sugar,  225g (8oz) unsalted butter cubed, 2 egg yolks,

12 green cardamon pods black seeds removed & crushed,

Handful of extra sugar for sprinkling

Method:

  1. Sieve flour + semolina, add salt and place on to your worktop ( I use a pastry mat).
  2. Make a well in the centre, add sugar, then butter cubes.
  3. Take a handful of flour and start kneading together.
  4. Add crushed cardamon seeds and keep kneading until all  but a handful of flour is left.
  5. Flatten dough and add  egg yolks on top.
  6. Keep kneading with remaining flour until smooth.
  7. Wrap in cling film (Saran wrap) and chill for 30 minutes in the fridge.

8.  Set oven to  160 degrees Celsius (325 F) to preheat.

9.Sprinkle surface with some sugar & roll out dough to a thickness of 1 cm (1.2 inch).

10. Cut into rounds, I use a 5 cm(2 inch) cutter with fluted edge.

11.Place on a solid baking tray and prick with a skewer or fork as shown below.

12. Bake for about 18-20 minutes until pale golden brown.

13. Place on cooling tray and sprinkle surface with some sugar.

There are three things that have made my family’s annual vacation to Cape Cod, Massachusetts just perfect over the last several years:

Sun, Sea and the Schoolhouse Ice Cream!

With its white picket fence, weatherboard deck and seashell strewn floral gardens, the Schoolhouse is as near as one can get to Ice Cream Nirvana.

There is simply no place better for a frozen cream treat on the Cape than this little family run old time ice cream parlor, just north of Harwichport center, due to its wonderful product, ambiance and generosity of portion

The owner, Sue Stanley tells me they home make all their ice cream on site, sourcing the best ingredients they can find including Dutch Chocolate and fine vanilla and they only make super premium (16% butter fat).

As a small local operation they serve just over 35 delicious flavors, adding new ones every season.  My kids and I have tried their classics, such as, Harwich Mud Pie (coffee, chocolate cake pieces, chocolate almonds etc), Brady Crunch Bunch named after the wizard of (American) Football, Tom Brady and his New England Patriots team, which combines Vanilla Ice Cream, Fudge and other crunchy treats. They also make one called Cherry Remi (maraschino cherries and choc chips) for Jerry Remi of Red Sox Baseball broadcasting fame

Their alcoholic numbers for more grown up customers, include Rum & Raisin infused with spiced rum and Irish Whiskey, containing a dram, or two of that smooth spirit. Both go down a treat! My personal favorites this year, are an unbelievably fruity strawberry and delicate peach ice creams with chunks of real fruit and we all love Peppermint Stick (kind of like Seaside Rock in ice cream for our readers in the UK), with crunchy red mint pieces in luscious peppermint ice cream.

Their frozen yogurt is fantastic too, I tried strawberry shortcake yesterday, a new flavor for this season. A must for anyone with a sweet tooth – soft shortbread like biscuit, strawberries and cream. Yum!

This little parlor really shows the love to their customers with bright happy staff, the most humongous portions you ever did see and something for their Canine Customers with a Free Doggy Sundae – Vanilla Yogurt and Dog Biscuits on offer

Diary of a Food Blogger – 25 July @ Foodies Festival Clapham Common

I love writing about food as I get to meet some interesting people, taste stuff, discover the story, and then write about it! My friend Simon enjoyed experiencing the life of a food blogger last Saturday when we hit Foodies Festival Clapham Common big style! Shame we haven’t invented the aroma blog! BBQ featured big style, the US trend continues to grow. Everything marinaded, smoked, slow cooked BBQ heaven! We had to pace ourselves as there were 100’s of things to try. Keeping it savoury we checked out “Come Fry With Me”. Tiffany Plant the founder launched at the Foodies Festival her seasoned fries & dips continuing the trend of “mono eatery”. Her takeaway opens in Covent Garden this October however we and lots of others got a sneak preview.

This was one of the most popular stands as seen by the queues. Lots of takers to join the mile fry club! I also met David who designed the strong branding.

We also met Nathan Hill, physicist, tech entrepreneur and exec chairman of Honest Grapes. Wow what a combo! Nathan and team recently launched Taste Lab  – a really interesting way to discover your personal preferred wine styles.

I am looking forward to testing these out, I had several volunteers offering to help me.

We then had dessert which also had an alcoholic twist. There is a growing trend for good quality ice creams infused with alcohol and we tasted a few at the festival. My favourite was from Drunken Dairy, booze-infused ice creams  and sorbets from Angela, made in Crystal Palace. I tried the GLT – gin,lime & tonic sorbet and the Dark Destroyer – rich chocolate & Grand Marnier,  -they tasted amazing.

I also wanted to give a shout out to Vishaka & Neeraj, the lovely founders of Tea People. They are from Darjeeling, the famous tea growing area in India and are now based in Reading, UK. They not only sell tea but partner with local charities in the region to  improve educational infrastructure for the families involved in tea growing.
