Tortilla Omelette with Chargrilled Courgettes

Simon and I decided we would do a  taste2taste off with recipes from UK vs USA as we love a bit of healthy competition. Simon thought brunch was a good subject especially as it’s Labor day weekend. I chose my twist on a Spanish Tortilla omelette as a perfect brunch dish, inspired by my recent Mediterranean holiday, surely a winner?

4 eggs, beaten

3 new potatoes skin on, thinly sliced (0.5cm, 1/4 inch thick max)

1 red onion, peeled & thinly sliced

1 courgette sliced, brushed with olive oil

4-5tablespoons olive oil (I used Spanish extra virgin)

Fresh oregano & thyme, finely chopped

Salt & black pepper

Preparation

Heat a chargrill pan and cook  your courgettes over a medium heat for  a few minutes each side until cooked. Leave to cool. Heat olive oil in a small omelette pan until hot and add sliced potatoes and season with salt & pepper. Cover and cook on a low to medium heat for 10 minutes. Add the sliced onions, herbs. Continue cooking gently for another 10 minutes until soft.

Drain the potato and onion slices in a sieve over a bowl to catch any excess oil. Add potato and onion to beaten egg, season with salt & pepper, mix gently and leave for 5 minutes. Add a tablespoon of drained oil back to pan and heat.

Add mixture and cook very gently for about 8-10 minutes until the tortilla starts to set.

If you’re feeling brave slide onto a plate, pan on top and turn over and cook for a further 5 minutes until set. Otherwise cook the top for a few minutes under a medium grill. Add the courgettes on top and grill for 2 minutes to warm. Serve with some fresh spinach. Can be eaten warm or cold.

From Ship to Shore: food stories from my Mediterranean holiday Chapter 1: Breakfast in Palma, Majorca.

I love checking out the local food specialities when on holiday and I had a great opportunity to experience lots of different cuisines on a recent cruise around the Med.

Our first port of call, Palma the beautiful city in Majorca. We arrived about 10.00am and found a lovely cafe in a cobbled square in the Old City just up the hill from the stunning and impressive Cathedral.

We had a delicious wedge of Spanish tortilla (onions, sliced potato and eggs) cooked slowly and served warm together with a strong coffee. I then spied a tiny bakery nearby that had nearly sold out of Ensaimades, the  spiral pastries which are a Mallorcan speciality. I had to buy the last few which the baker kindly cut up so we could all share.

They are like a cross between a croissant and an enriched bread, light and not too sweet, with just a dusting of icing sugar on top. A great way to experience breakfast the Mallorcan way.

Ingredients

  • 2.5 tbsp Spiced Rum
  • A dozen or so Mint leaves (I picked them fresh from mint growing on our garden steps this afternoon!)
  • 1 tbsp Sugar (I find that the best thing to do is take the granular sugar and then mix it with boiled water to form a syrup, then add it to the drink as per the recipe)
  • 3 x tsp of fresh squeezed lime juice
  • 1/4 cup of club soda, or more depending on taste

Method

  • Place the Mint leaves in the bottom of a glass
  • Add the crushed ice, Spiced Rum, sugar, and lime juice
  • Mix it all up
  • Then add the soda water
